It is so quick to make and it tastes beautiful. Your friends will be licking their plates with this one!

1 cup sugar
1 egg
splash of vanilla
1 1/4 cups plain flour
extra sugar for sprinkling
2-3 peaches or nectarines

preheat oven to 180deg
In a dry clean bowl cream butter and sugar together until light and fluffy. Add vanilla and beat. Add egg and beat. fold through flour with spatula...dont over-fold. keep it light!

Put into greased and lined springform pan. Smooth the top.

Cut up desired fruits, making sure to leave the skin ON. Arrange on top of flan base. Sprinkle with a fair amount of extra sugar.

Bake in oven for 45min-1 hour. If it starts to brown on edges, cover with foil after about 35 minutes.

Cool and serve with cream or icecream and fresh fruit and sweet wine!
