Chicken, spicy sausage and baby spinach pasta


Ever just need a simple dish that takes next to no time, but is delicious and hearty? This is a dish that you have to give a try this weekend. It is a really simple winner in the quick dinner stakes, and tastes so yummy. 

Ingredients
500g chicken
chorizo or spicy sausage
1 red onion
baby spinach leaves
1 punnet cherry toms halved
pasta
balsamic vinegar
tomato paste

Method

Take some spicy sausage, or you could use some chorizo if you wish and cut and fry it up in a non stick pan


remove the sausage from the pan. Leaving the juices, add the chopped red onion and chicken and fry until browned


put the sausage back into the pan and add a punnet of cherry tomatoes halved


Add a few tablespoons of tomato paste and a few dashes of balsamic vinegar, maybe a splash of water


Meanwhile boil up the pasta of your choice


When the pasta is cooked, drain and put back into the pot. Add the chicken and sausage mixture and some baby spinach leaves. Toss in a bit of parmesan if you choose and season with some salt and pepper. 


Serve up in some dishes and consume wildly!
